GOOD FRIDAY MEAT FREE DESSERTS


Introduction

In the Philippines, Good Friday desserts are traditionally meat-free, dairy-rich, and often served as a substantial merienda (afternoon snack) to sustain those who are fasting or abstaining from meat.

Top Desserts

Binignit (Visayan Dessert Soup) is a staple in the Visayas region specifically for Good Friday. This warm, creamy stew is made with glutinous rice, coconut milk, and various tubers like kamote (sweet potato), gabi (taro), and ube. It often includes saba bananas, jackfruit, and landang (palm flour jelly balls). Ginataang Bilo-Bilo is the Luzon counterpart to Binignit, this dessert features chewy, handmade glutinous rice balls (bilo-bilo) simmered in sweetened coconut milk with diced sweet potatoes, taro, and sago pearls. Ginataang Munggo (Lelut Balatung) is a sweet, creamy porridge made from toasted mung beans, glutinous rice, and coconut milk. The numerous mung beans are sometimes said to represent the countless sins of mankind. Puto Maya & Sikwate is a popular pairing in Cebu where steamed sticky rice (puto maya) is served with a thick, bitter-sweet hot chocolate drink (sikwate) made from tablea. The bitterness of the chocolate is often linked to the Passion of Christ. Binallay is a traditional rice cake from Cagayan Valley made of glutinous rice wrapped in banana leaves. It is served with a rich dipping sauce called laro made from coconut syrup and curdled coconut cream, symbolizing the body and blood of Christ.

Summer Favorites

Because Good Friday often falls during the hottest months, these cold treats are also very popular are: Halo-Halo is the "unofficial national dessert," featuring a mix of shaved ice, evaporated milk, and various toppings like leche flan, ube halaya, and sweetened beans. Mais con Yelo is a simpler refreshing treat consisting of sweet corn kernels, shaved ice, and milk. Buko Pandan is a chilled dessert made with young coconut strips, pandan-flavored jelly cubes, and sweetened cream. Buko Salad is a chilled fruit salad using young coconut strips, cream, and condensed milk.

Native Rick Cakes

These are often shared with neighbors and family during Holy Week gatherings: Biko is a sticky, sweet rice cake made with brown sugar and coconut milk, typically topped with latik (fried coconut milk curd). Cassava Cake is a dense, moist cake made from grated cassava and coconut milk. Suman, Various types of glutinous rice cakes wrapped in banana or palm leaves, often eaten with sugar or coconut jam. Puto Maya & Sikwate is a popular pairing in Cebu where steamed sticky rice (puto maya) is served with a thick, hot chocolate drink (sikwate) made from local cacao tablea.

Other

Leche Flan, though a staple for almost any celebration, it remains a favorite "must-have" during Holy Week. Maruya (Pinaypay), these fried banana fritters are common as a merienda (snack) during the Lenten season due to their simple, meat-free ingredients. Palitaw, a Small, flat rice cakes topped with sugar and grated coconut, chosen for their simplicity and as a symbol of humility.

These dishes are often considered "food for the soul" and carry symbolic meanings related to the Lenten season.
